Spiced Cranberry Baked Brie

An easy from-scratch cranberry compote with warm spices and citrus tops creamy Brie cheese. Savory, tart, and lightly sweet, when served straight from the oven, this holiday appetizer is a crowd favorite.

Makes one 8oz. wheel of brie, 6-8 servings

Ingredients

1 cup fresh or frozen cranberries 
1/4 cup granulated sugar
2 Tbs. orange juice
1 tsp. orange zest
1/8 tsp. cinnamon
1/8 tsp. allspice
1/8 tsp. ground ginger
1 (8oz.) wheel double-cream Brie cheese
1 tsp. minced fresh chives, for garnish
Assorted crackers and/or crostini, for serving

Instructions

  1. Preheat the oven to 400° F. Line a baking sheet with parchment paper.
  2. Place the cranberries, sugar, orange juice, orange zest, cinnamon, allspice, and ginger in a medium saucepan. Stir to combine. 
  3. Set the pan over medium-high heat. Cook, stirring occasionally, until the sugar is dissolved and the cranberries begin the bubble. Once bubbling, reduce the heat to medium-low. Allow the cranberries to simmer for 5-7 minutes, stirring regularly, until thickened and reduced by half. Remove the pan from the heat and allow the compote to cool for 5 minutes.
  4. Place the wheel of Brie onto the baking sheet. Spoon the cranberry compote into the center of the wheel. Transfer the baking sheet to the middle rack of the preheated oven. 
  5. Bake the Brie for 12-14 minutes, until the sides appear slightly puffed.
  6. Remove the baking sheet from the oven. Carefully transfer the Brie to a plate and garnish with minced fresh chives. Serve immediately with an assortment of crackers and crostini.
