Ingredients
1 3/4 to 2 pounds Atlantic salmon
1/2 teaspoon salt, divided
1/4 teaspoon black pepper
1/2 cup Panko breadcrumbs
1/3 cup grated Parmesan cheese
2 teaspoons finely minced fresh dill
2 teaspoons finely minced fresh parsley
1 teaspoon finely minced fresh chives
Leaves of 1 sprig fresh thyme
1 teaspoon lemon zest
1/4 teaspoon garlic powder
2 tablespoons salted butter, melted
Instructions
- Preheat the oven to 350° F. Line a baking sheet with parchment paper. Arrange the salmon on the sheet skin side down and sprinkle with 1/4 teaspoon salt and black pepper. Set aside.
- In a medium bowl, mix together the Panko, Parmesan, dill, parsley, chives, thyme, lemon zest, garlic powder, and remaining 1/4 teaspoon salt. Drizzle the melted butter into the bowl and continue mixing until the crumbs are evenly moistened.
- With clean hands, gently pack the crumbs onto the salmon, forming a crust. Transfer the baking sheet to the middle rack of the oven.
