Parmesan Herb Crusted Salmon

This Atlantic salmon baked under a crunchy, buttery Parmesan and herb topping takes only 10 minutes to prepare, 20 minutes to bake, and requires minimal cleanup, making it an easy dish for elegant entertaining.

Makes 4 to 6 servings

Ingredients

1 3/4 to 2 pounds Atlantic salmon
1/2 teaspoon salt, divided
1/4 teaspoon black pepper
1/2 cup Panko breadcrumbs
1/3 cup grated Parmesan cheese
2 teaspoons finely minced fresh dill
2 teaspoons finely minced fresh parsley
1 teaspoon finely minced fresh chives
Leaves of 1 sprig fresh thyme
1 teaspoon lemon zest
1/4 teaspoon garlic powder
2 tablespoons salted butter, melted

Instructions

  1. Preheat the oven to 350Β° F. Line a baking sheet with parchment paper. Arrange the salmon on the sheet skin side down and sprinkle with 1/4 teaspoon salt and black pepper. Set aside.
  2. In a medium bowl, mix together the Panko, Parmesan, dill, parsley, chives, thyme, lemon zest, garlic powder, and remaining 1/4 teaspoon salt. Drizzle the melted butter into the bowl and continue mixing until the crumbs are evenly moistened.
  3. With clean hands, gently pack the crumbs onto the salmon, forming a crust. Transfer the baking sheet to the middle rack of the oven.
  4. Bake for 18 to 22 minutes, until the crumbs are deeply golden and the salmon is just opaque. If the topping appears to be browning too quickly, loosely cover the salmon with a sheet of aluminum foil halfway through the baking time.
  5. Remove the baking sheet from the oven. Break the salmon into portions and serve immediately.
