Just four ingredients and a blender are all that’s needed for these high-protein, macro-friendly waffles that have a taste and texture shockingly close to traditional waffles.
Makes 2 standard size waffles or 8 miniature waffles, 4 servings
Ingredients
60g (2 scoops) Quest protein powder*
2 large eggs
200g liquid egg whites
40g (1/2 cup) quick-cooking oats
Instructions
- Preheat a waffle iron according to the manufacturer’s instructions.
- Place all the ingredients in a high-powered blender. Blend on high until the mixture is very smooth.
- Spray the waffle iron with nonstick cooking spray and pour in just enough batter to cover the grates. Do not over fill the waffle iron, as this batter expands.
- Close the waffle iron and cook for 2-3 minutes, or until the waffle is golden brown and crispy. Carefully transfer the waffle to a plate and repeat step three with the remaining batter.
- Serve the waffles immediately, or freeze. These waffles are excellent when reheated in the toaster.
*The type of protein powder used matters! I recommend Quest or P.E. Science, as these brands are whey/casein blends formulated to work well when used in recipes. Use any flavor, but I love the cinnamon and vanilla varieties for these waffles.
