With plenty of fresh strawberries, no-bake whipped honey cheesecake filling, and a crunchy pretzel and graham cracker crust, this easy pie is perfect for summer entertaining.
Makes one 9-inch pie, 8 to 10 servings
Ingredients
Pretzel-Graham Crust:
3/4 cup pretzel crumbs (about 1 ½ cups mini pretzels)
3/4 cup graham cracker crumbs (5-6 full sheets)
3 Tbs. (37g) granulated sugar
¼ tsp. cinnamon
1/3 cup (80g) unsalted butter, melted
Honey Cheesecake Filling:
12 oz. cream cheese, at room temperature
½ cup (100g) granulated sugar
2 tsp. honey
2 tsp. vanilla extract
1 ½ cups (375ml) heavy cream, cold
2 cups fresh strawberries, sliced
Honey, for drizzling
Instructions
- Preheat the oven to 350° F.
- Place the pretzel crumbs, graham cracker crumbs, sugar, and cinnamon in a large bowl and mix to combine. Drizzle the melted butter into the bowl and mix until the crumbs are evenly moistened. Place the mixture into a 9-inch pie plate and press it firmly into the bottom and up the sides, creating a tightly-packed crust.
- Transfer the pie plate to the middle rack of the oven. Bake for 11-14 minutes, until the edges are deeply browned. Remove the pie plate from the oven and allow the crust to cool completely before filling.
- Place the cream cheese, sugar, honey, and vanilla extract in a large mixing bowl. Beat with a hand mixer on medium-high speed for about 2 minutes, or until the mixture is completely smooth.
- Pour the heavy cream into the bowl and beat on low speed until it’s just combined, then increase the speed to medium-high. Continue beating for 2-3 minutes, or until the mixture holds stiff peaks.
- Spoon the filling into the cooled pie crust and smooth it into an even layer. Gently press a piece of plastic wrap directly to the surface of the filling and transfer the pie to the refrigerator.
- Refrigerate the pie for at least 4 hours before serving, but preferably overnight. Just before serving, remove the plastic wrap and arrange the sliced strawberries over the filling. Drizzle the berries lightly with honey, and serve.
