Addicting oven-baked tots made with cauliflower instead of potatoes make it easy to sneak an extra serving of vegetables into a meal.
Makes 2 dozen tots
Ingredients
4oz. (2 heaping cups) finely chopped cauliflower
1/2 cup plain breadcrumbs
1 cup shredded cheese
1 egg
1 egg white
1/2 tsp. garlic powder
1/4 tsp. onion powder
1/2 tsp. salt
1/4 tsp. black pepper
Ketchup, for serving
Instructions
- Preheat the oven to 400° F. Line a baking sheet with parchment paper.
- Place the chopped cauliflower in the bowl of a food processor or blender. Pulse multiple times, until the florets have the same texture as couscous. Transfer the cauliflower to a mixing bowl.
- Add the breadcrumbs, shredded cheese, egg, egg white, garlic powder, onion powder, salt, and black pepper. Mix with a rubber spatula until the ingredients are thoroughly combined and hold together when pinched.
- Shape the mixture into 24 “tots,” using about a Tablespoon for each, and arrange them on the baking sheet.
- Transfer the baking sheet to the middle rack of the preheated oven.
- Bake the tots for 15 minutes. Flip them, and continue baking for 8-10 minutes longer, until golden brown.
- Remove the baking sheet from the oven. Serve the tots immediately, with ketchup, if desired.
